Simone Restaurant opened in March 2026, brings a fusion menu that blends Italian classics with Mediterranean and Peruvian influences. The kitchen focuses on handmade pizzas and fresh pastas, prepared in view of guests in the open kitchen, alongside dishes such as Mediterranean-style fish fillet, smoked grilled lamb, Peruvian ceviche, a selection of carpaccios, and many more unique and tasty dishes.

Located on Avenida Hidalgo, opposite Romano's Restaurant and next to Asia Caribe, the restaurant sits on the main dining area of the island. Seating is available along the street or closer to the kitchen, where guests can watch the preparation of pizzas and pastas throughout the service.
